Vegan Spelt Chocolate Chip Cookies

Vegan Chocolate Chip Cookies

Happy Saturday!

I’m so excited to share this vegan chocolate chip cookie recipe today because I just realized something: for as much as I love to bake cookies, this blog is seriously lacking recipes to show for it. Then, I realized why – the camera can hardly snap a photo before Jack reaches his hand into the frame, and they all disappear. Waiting for me to arrange warm cookies nicely on a plate is not something this guy I’m with usually has the patience for.

But today, we were able to get a few shots of these, and I couldn’t be happier, because these vegan chocolate chip cookies are my new favorite treat!

About these vegan chocolate chip cookies

These vegan cookies are made with coconut oil instead of butter. I like using it because it’s a great healthy non-dairy fat that’s less processed than vegan butter substitutes. While I use a flax “egg” to hold these together, a regular egg will work fine here if you’re not vegan and don’t have flax.

You’ll notice, this vegan chocolate chip cookie recipe yields a small batch. If you are making cookies for your family, you can easily double it. For Jack and me, 12 vegan cookies is the perfect number.

Author:
Recipe type: Dessert
Serves: 12 cookies
Ingredients
  • 1 tablespoon ground flaxseeds
  • 3 tablespoons warm water
  • ½ cup spelt flour
  • ½ cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup coconut oil, slightly softened
  • ½ cup cane sugar (or regular or brown sugar)
  • 1 teaspoon vanilla
  • 1-2 tablespoons almond milk
  • ¼ cup whole rolled oats
  • ½ cup semisweet chocolate chips
  • ¼ cup chopped walnuts, optional
Instructions
  1. Preheat oven to 350° degrees and line a baking sheet with parchment paper.
  2. In a large mixing bowl (or the bowl of your stand mixer), combine the flax and water. Stir until combined and let it sit and "gel" for 5 minutes.
  3. In a medium bowl, sift together the flours, baking soda and salt.
  4. To the large mixing bowl, add the coconut oil, sugar, and vanilla. Mix with an electric mixer until smooth and well combined.
  5. Gradually add the dry ingredients, and mix until well incorporated. If the batter is too thick and sticky, add 1 to 2 tablespoons almond milk.
  6. Stir in the oats, chocolate chips, and walnuts, if using.
  7. Use a 1 tablespoon measuring spoon to scoop balls of dough onto your cookie sheet. Bake for 8-11 minutes, or until the cookies are lightly browned on the edges.
Notes
Whole wheat can be used in place of the spelt flour.

For a non-vegan version, you can use 1 egg, just skip the flax and water.

Butter can be substituted for coconut oil.

For a richer cookie that flattens out more - increase coconut oil by 2 tablespoons.

After using this recipe for literal years, I feel like I finally have to comment and express my thanks. I cannot count how many times I’ve made these cookies or how many people have told me they love them after trying them. In a pinch I have even memorized the recipe. It’s just my favorite cookie, and I already made them for my own birthday this week. Thank you for making this recipe!

These were soooo good! Really like how it had spelt and oats. Have you tried with all spelt flour? Maybe that was in the comments somewhere. Awesome recipe thanks!

Hey! I was wondering if I could substitute some of the coconut oil with organic apple sauce? I was thinking half and half. Let me know what you think.
    Cheers,

Hi Lexie, I think that might work but I haven’t tried it so I can’t say for sure – if you give it a go can you let me know how it works out?

Wondering if all of the flour can be replaced with a GF AP flour?

Hi Jocelyn, I have used all GF flour, but I haven’t experimented with too many brands in this particular recipe. I’d say if you have a favorite GF AP flour that you use for other recipes, it should work here. I’ve made these successfully with this one: https://bonadeaglutenfree.com/

I tried these today and they turned out soooo good! My 4 year old (who’s super picky, to say the least) gobbled them up too. I used date sugar instead of cane sugar and whole wheat flour in place of spelt flour, like you suggested. Thanks for your wonderful blog, creative recipes, and delectable photos!!

These little baby’s are amazing. Thank you for sharing your recipe. I used what I had on hand so I replaced the spelt flour with rice flour and instead of vanilla essence I used pure maple syrup! Delicious!

These look awesome! Do you know if it’ll work using just spelt flour instead of all purpose flour? and would it be the same quantity needed?

  16. Bookmarking these to make for my hubby, I don’t make him enough vegan sweet treats. I also add flaxseeds to a lot of my bakes and it goes into my wee boy’s porridge every morning too.
