Are you feeling as stuffed as I am? This year we actually celebrated Thanksgiving a week early with Jack’s family – yet I’m still full from his mom’s amazing apple pie and the leftovers we’ve been snacking on all week.

Gosh, thank you so much for including me on your squash roundup. 🙂 Wanted to let you know I made your brussels + apple salad for Thanksgiving (it was a quiet one just with my husband) and we LOVED it. It was my first time using the mandolin to shave brussels and what a difference in comparison to trying to slice thinly with a knife, haha.

Great round-up! I turn to winter squash as soon as the weather gets colder, and I don’t intend to let up just because it’s past Thanksgiving.
I love Spaghetti Squash but I always forget to buy some. I’m better about buying Butternut because I can get it pre-cubed at the supermarket!
