Jack’s parents are visiting for Mother’s Day this weekend. After the rush of the last few weeks—we launched Simple Feel Good Food! Our son Ollie turned 2!—I’m hoping to keep the cooking simple. A spring appetizer board like this one will definitely make an appearance sometime over the weekend.
I love these types of platters because they look gorgeous (check out those pretty spring radishes!), they offer lots of contrasting textures and flavors, and they’re surprisingly easy to put together. Bonus: you can prep all the components in advance! If you need an appetizer idea for a gathering this season, I highly recommend making one. Keep reading to see how I do it!
Appetizer Board Components
When I make an appetizer board, I always start with seasonal veggies. Radishes are my #1 pick in spring because they come in so many vibrant colors and their crisp texture makes them great for dipping. Blanched snap peas and asparagus are also excellent at this time of year, as are carrots. Here, I’m using pickled carrots. They add a bright pop of flavor to this fresh spring board!
I love to serve a creamy dip alongside all these crunchy veggies. My whipped feta is one of my favorites for spring. Its rich, tangy flavor goes nicely with the fresh garnishes I love to use at this time of year, like herbs and lemon zest.
In addition to veggies for dipping, I like to include something starchy. Sliced baguette is pictured here, but crackers and crostini are great choices too.
And finally, because it’s spring, I love adding hard boiled eggs! I think they make this platter look so festive.
Make-ahead tips:Â Make the pickled carrots up to a week ahead (their flavor only gets better the longer they’re in the fridge!). You can also cook the hard boiled eggs and make the whipped feta up to 3 days in advance.
Variations
The really fun thing about an appetizer board? You can totally customize it! Here are a few ideas to change up this combination of ingredients:
- Use a different pickle. Pickled asparagus and/or pickled radishes would both be at home on this board.
- Swap the dip. Anything creamy works well here! Try hummus, white bean dip, vegan ranch, or my creamy avocado dip.
- Make fancier eggs. Not feeling plain hard boiled? Make pickled eggs or deviled eggs instead!
- Or skip the eggs entirely. Replace them with roasted nuts, olives, or cheese.
