Enoki and Oyster mushrooms in some hot ramen with a soft-boiled egg. Chewy and satisfying texture. Warms you up for the winter.
Saute in butter with a little lemon juice, or in Boeuf Bourguignon, or in an omelette, oh yum.
I use enoki mushrooms as a noodle substitute in asian broth! Yum.
All the ways! Particularly, on the grill, on pizza, or Spanish style with lots of garlic and olive oil.
My fave way to cook mushrooms is to sauté them in a little butter, garlic and salt for a simple side dish!

love love love mushrooms! I tend to favor an earthy shitake: they can really transform an entire dish.
For Shitakes, simmer slices with melted butter, a pinch of salt, and a splash of water. Let liquid cook off and stir occasionally until the mushrooms crisp around the edges. Top with pepper and parsley, or not. Tastes better than bacon.
i love mushrooms all ways but my recent favorite is in Vegetarian Stuffed Peppers! when you dice them small and sautee with onions, celery, and garlic they get sort of a meaty texture and taste very savory and delicious!
