I pretty much love mushrooms in anything, but my favorite way would probably be grilled mushrooms tossed with carmelized onions and butternut squash! Mmm!

Mustardy Chicken Stew with Brown Rice and Braised Mushrooms. It has all of the warm and fuzzy feelings of comfort food, but is healthy too.

I don’t have many great recipes for mushrooms but your cheesy brussels sprouts (& mushroom) lasagna sounds amazing!! I’d love to try that.

I absolutely LOVE mushroom tacos! There’s a group that makes vegetarian tacos at farmers’ markets and food festivals around where I live and their mushroom tacos with red sauce and cotija are to die for. I started making them at home and they’re really easy to make and SO good!

I make a 3 mushroom stacked crepe cake that is so good and rich. Shiitake, crimini and portobellos sauteed with onion and provolone and parmesan and then layered with savory crepes.

I grow donko shitakes on logs in our backyard, super easy to cultivate which makes them my favorite mushroom! Love them sauteed and served with goat cheese as crostini or in soups, the umami really brings out the flavors!
