I am not a huge mushroom fan, but at Rioja (Denver) I absolutely loved the mushrooms in my grilled kampachi. The ingredient’s listed on their website: roasted spaghetti squash, red verjus poached quince, matsutake mushrooms, shiitake mirin broth, scallion. Amazing!
I make a wild mushroom and apricot ragout and serve it on top of polenta rounds. I just sautee the two together with some onions, garlic and thyme, then place then on polenta with a bit of goats’ cheese 🙂
I love them sautéed with garlic and onions….and I deglaze the pan with balsamic. Yum!
I was so excited about the fancy mushroom sale at WF over Thanksgiving! I love them many ways, especially roasted and tossed with something savory!

I’m one of those mushroom haters… hope I’m still eligible! I tend to substitute it for other earthy meaty veggies such as eggplant.
Wild mushroom risotto…mushroom slices sauteed in butter and garlic and deglazed with a bit of vermouth is really heavenly!
I love adding different types of mushrooms to stews and soups at the very end (particularly enoki mushrooms). It just jazzes up any soup.
