I realize we’re at the beginning of pumpkin latte season, but I still have lots of late summer produce – eggplant, summer squash, and peppers of all shapes and sizes. Here’s a little roundup of some of my favorite red pepper recipes, plus a few that are on my to-make-soon list. As always, feel free to suggest some of your favorites!

Love stuffed peppers! I’ve been thinking of something fun to do with some couscous I have stored and can’t wait to try this out 🙂
Perfect timing on this post! My refrigerator is overflowing with peppers right now and my dad keeps piling more on me every time I see him. I will certainly be trying a few of these recipes!
ha, so glad 🙂
It’s such a great idea that you give us a review of some of your favorite recipes. And those stuffed peppers, harissa and romesco sauces look amazing. Must use these little red peppers more often!
Ohhhh thank you so much for these! They look so good and I’m always needing to add new veggie recipes to my meal options.
Those mini peppers look just darling. So many nice recipes to check out. Thanks for sharing!
I’m sure I’ve said it before, but you really do have a beautiful blog! Thanks so much for the recipe list as a great end to the summer.
Looking forward to your fall recipes already 🙂
aw, thank you!
Wow! I would make about 90% of these. Wishing the last few hours of work go by fast so I can rush home to make one!
Thanks!

Your blog is amazing! I love all recipes. Thank you very much! Greetings from Croatia 🙂
I so don’t want summer to in. But, winter is coming (fall really, but I had to throw in a Game of Thrones reference).
Your stuffed peppers look great! I really like all of these suggestions. They’re definitely inspiring. I love roasted red pepper hummus with homemade pita chips. You can find the recipe for the hummus on my blog.
Best,
Rosanna
I love my red peppers in my kachumbari salad. They always make this Kenyan Salad even richer.
The red pepper and white bean spread is calling to me right now! I love red peppers the best, they seem to still have a hint of sweetness, which I love.
I adore peppers, especially red! Also your blog is beautiful – really diggin’ the look.
thanks Vanessa!
I love peppers, in fact, I’ve just written a recipe for a book coming out soon call The Red Pepper Cookbook!
