I’m making brunch with baked oatmeal, cinnamon rolls and a waffle bar!
That roasted vegetable lasagna looks incredible. I’m thinking something baked like French toast or cinnamon rolls.
Rhubarb crumble. And sourdough cinnamon rolls – sounds odd, but they are truly amazing!

For mother’s day I would love for my family to cook me dinner as I am the only one who cooks. That said, a breakfast of coffee and toast, preferably not burned. A sliced up orange would be nice, but a whole one would be safer for all involved. Caesar’s salad for lunch and some other time easy to make dinner would be awesome…. spaghetti pomodoro? Basically, meals I don’t have to cook and don’t require a visit to the emergency room! Happy Mother’s Day!

I’m making chicken and spring vegetables sheet pan recipe for my lunch then I’m headed to work to serve lots of families taking mom out to dinner!
I’m making the Banana Bread Breakfast Cookies from the new cookbook– I know my mom (and dad) will love them. I have made the recipe for myself 3 times already. I’m basically buying bananas now to let them ripen until brown so we can have these. They are the perfect grab and go breakfast– delicious. 🙂
Blueberry oatmeal bake!
I will be making my mom either a true fettuccine Alfredo (sauce of butter, pasta water, and parmesan) with spring vegetables or perhaps a mushroom risotto.
I’ll be making my mom’s favorite caramel cake to celebrate!
Southwest Tofu Scramble and a fresh fruit salad with the berries that have started appearing at the Farmer’s Market!

I will be roasting a hen with lemon and herbs. To this I will add asparagus in a hollandaise sauce and twice mashed potatoes. A wonderful fresh garden salad and a homemade strawberry cake will complete my menu. I will make this awesome menu for my daughter. My mother lives in heaven now and not being able to cook for her I would love to cook for my daughter who has given me such blessings in my life. To join the table with our family my grandkids my daughter my son-in-law my sons and their families will be the joy of my life on mother’s day
Strawberry Rhubarb Pie is mom’s favorite. 😀
My kids (4 & 6) are going to make a pitcher of mango-tamarindo aguas frescas and spend a relaxing day at the pool with friends and family 🙂
I would love a shakshouka for breakfast!
