I don’t know how it happened. Just yesterday it was July and here we are, it’s almost Christmas. In the spirit of the holidays, I thought I’d share a few healthy-but-not-too-healthy recipe ideas. These are some cheery favorites, organized into 3 simple menus for various types of holiday gatherings:
Party Food (pictured above):
Vegan Kale & Artichoke Dip
Minty Pomegranate Spritzer (my go-to holiday cocktail!)
Curried Avocado Chickpea Salad Sliders
Cranberry Pistachio Chocolate Bark
A Cozy Christmas Morning:
Strawberry Vegan Waffles
Mini Spinach & Sun dried Tomato Frittatas
Apple Mimosas
Almond Milk Chai Lattes
Dinner Party:
Ginger Kombucha Cocktails
Minty Millet Pomegranate Salad
Sweet Potato Vegan Alfredo
Tart Cherry Cheesecake Parfaits
I can vouch for that sweet potato alfredo. I’ve made it several times and it’s so delicious. Definitely need to add the almond milk chai latte to our holiday menu too! Thanks for sharing some great meal ideas for the holidays!
those pomegranate spritzers are stunning!!
Lovin’ this Tart Cherry Cheesecake Parfaits! Thank you for sharing these healthy-but-not-too-healthy recipes. Lol. My kids will definitely love these.
Love that cranberry bark! I do a similar one with dried apricots.

thanks Maddie!!
Love this, thank you for sharing!
Those mini fritatas are adorable and I’m coveting those pans! With my family they’d want to customize their own, so the mini pans are a brilliant idea!! x
ooh, I love the idea of a “customize your own” frittata! 🙂
Holy shit, I’m suddenly hungry even though I just had lunch a few hours ago.
Anyway, I find it incredible that are people out there (like you) who take the time of day to actually search and make healthier versions of foods that most people eat / want to eat.
I’ve recently (about a year ago, do I consider that ‘recently’?) I changed my diet, and the way I see my body and what I put into it. We are what we eat, right?
I like cooking, but I’m not the best cooker, so thank you for providing recepies that aren’t so damn hard to make (also, living in Portugal – I can’t find most products that people use.)
I’m really curious to make the Tart Cheesecake Parfaits the dip and the salad sliders. They look delicious. My gran isn’t into the whole healthy eating type of thing but even she thinks these look delicious. So once again, thank you!
Ha! Well, these are the foods that I like to eat – healthy (for the most part!), while also delicious. Let me know if you and your gran enjoy the recipes 🙂 xoxo
