This Greek dressing recipe is really versatile, so have fun experimenting with different ways to use it. Here are a few of my favorites:
- On my easy Greek Salad! I love how the tangy dressing plays off the fresh tomatoes, cucumbers, red onion, bell pepper, rich feta cheese, and briny kalamata olives.
- On my Cucumber Tomato Salad. Can you tell that this dressing tastes great with tomatoes and cucumbers?
- On my Italian Chopped Salad. Substitute this Greek salad dressing for the lemon vinaigrette.
- On any green salad. Drizzle it over your favorite greens to make a tasty side salad, or add croutons, roasted chickpeas, hard boiled eggs, and/or chopped fresh veggies to make it a meal.
- On roasted veggies. Spoon it onto roasted cauliflower, broccoli, Brussels sprouts, tomatoes, fennel, or potatoes after they come out of the oven.
- On grilled veggies. I love drizzling Greek salad dressing over grilled zucchini, potatoes, asparagus, corn, or grilled veggie skewers.

I made a homemade Greek salad and wanted to make dressing from scratch. I tasted this before adding to the salad and wasn’t sure, but once it was tossed with the salad it was LOVELY! Of course! It would be excellent on a Greek pasta salad too. Just replace lettuce with cooked pasta. You may want/need to double or triple the dressing recipe since pasta soaks up the dressing.

I had some leftover Chicken Tawook with rice pilaf and decided to turn it into a salad with what I had in the fridge: romaine lettuce, spinach, cucumbers, cherry tomatoes, and feta cheese. This was the best Greek salad dressing I’ve made in a long time. My husband won’t touch bell peppers of any color (although I added a few red ones to my salad!) so I used romaine lettuce for the crunch and added chickpeas to the salad. I thought I’d miss the lemon juice but I preferred it without lemon juice. Will be my “go to” Greek dressing recipe! Enjoyed it with a Greek seasoned grilled chicken breast and a crunchy baguette.

Hi Brittany, That’s totally normal! Olive oil solidifies at cold temps. If you bring it to room temperature, it will loosen up again.
Just take it out and let it warm up, it happens all the time. If you’re in a hurry just defrost for about 30 seconds 1/2 power in microwave.

This is my go to recipe for Greek salad dressing. It’s absolutely perfect. I do sometimes use 1 T lemon juice and 2 T red wine vinegar instead of all vinegar, but either way is delicious. This recipe turns out perfectly every time!
