Skinny Lemongrass Mojitos

Summer has officially begun this week – and we’re making mojitos! I hope your herb garden is ready because instead of the basic mint mojito, these are made with lemongrass and basil as well. Basically, I like to build cocktails the same way I approach salads – the more fresh herbs and citrus, the better. To make these “skinny,” I skipped the sugar and sweetened these with Truvia Natural Sweetener instead. It has no calories and it’s sweetness comes from the stevia leaf. Personally, I’d rather splurge on a dessert than on a sugary cocktail so I love that these mojitos are…

Super Fun Summer Smoothies!

Enjoy classic treats in smoothie form! These four fun drinks are inspired by blueberry muffins, PB&J, mint chip ice cream, and peaches & cream.

Every so often, I get on these mean green daily smoothie kicks that, in all honesty, can get a little TOO green over time. The kick starts with delicious well-balanced smoothies, but as the days go on, I start cutting corners. I add too much liquid so that the blender will blend fast, leaving me with a watery smoothie. And speaking of water, that’s what I use when I run out of almond milk. I add ice in the name of “thickness,” and I start skipping all ingredients that actually add flavor. What I (we) are left with to drink first thing in…

Orange Peel Black Tea Sangria

Happy Long Weekend! Jack and I are off to the farmers market this morning but I wanted to pop in quickly and share this sangria recipe. I posted it on Instagram awhile back – but I think it’s such a refreshing cocktail for weekend BBQ’s that I wanted to share it here on the blog as well. This combines two of my favorite things in the world – iced tea and wine! Its simple to make – just pour the wine and iced tea into a large pitcher and add the fruit. Chill overnight, so that the flavors will infuse, and serve it…

Black Pepper Turmeric Latte

I love this immune-boosting black pepper turmeric latte on cold mornings. With just 6 ingredients, this spicy, warming vegan drink is easy to make.

Happy Saturday friends! We’re currently having a lazy morning that’s consisted of smoothies and Shark Tank… a.k.a our Saturday morning “cartoon.” It’s dark and drizzly outside, so we’re likely not leaving the house anytime soon. I thought I’d take a second to pop in and share this super simple turmeric latte recipe. I posted it on Instagram earlier this week, but I thought I’d share it here too. Earlier this year, I stopped drinking *so much* coffee (not that I feel there’s anything wrong with coffee!) and started drinking more matcha. This week, I’ve moved onto this herbal tea turmeric…

Winter Spiced Moscow Mule

A fun and festive holiday spin on a Moscow Mule - perfect for New Years Eve! This healthier version uses ginger kombucha instead of ginger beer.

Hello from Holiday Vacation-land… aka, my parents house where Jack and I have been spending the week. We flew in just in time to have a white Christmas before the snow melted. Other than spending time with family, we’ve been spending time in the house because we’re really not winter people. I binge-watched Shirley Temple movies; Jack fixed my parents computer. We’ve been eating my mom’s Christmas cookies, and I’ve been working on a few new recipes – spending time in front of the stove is the best way to stay warm around here! All in all, it’s been a much-needed…

Healthy Hot Chocolate

This healthy hot chocolate recipe is the perfect cold weather treat! It's totally vegan and dairy-free, but it's still rich, chocolatey, and delicious.

Lately, Jack and I have been guzzling mugs of this healthy hot chocolate for breakfast. If you’re thinking, “Hot chocolate for breakfast?!”, you have to hear me out. This healthy hot chocolate recipe is a far cry from the Swiss Miss hot cocoa I drank as a kid. It’s naturally sweetened, and nutrient-rich cacao powder takes the place of processed cocoa. Plus, I make it with almond milk, so it’s totally vegan and dairy-free. Fair game for breakfast? 100% yes. Now, if you think “healthy” is code for “watery” or “bland,” think again. This healthier hot chocolate is rich, creamy,…

Homemade Vanilla Hazelnut Milk Latte

Delicious homemade hazelnut milk flavored with maple, cinnamon, nutmeg & vanilla is perfect with coffee or espresso! Great for lazy weekends. Vegan.

Happy Friday! I have a fun little weekend project for you – take a few extra moments to make your own hazelnut milk! It’s so delicious, I promise it’s worth the effort. Actually, it requires very little effort, it just takes some planning ahead for the proper amount of soaking and chilling. The result is a delightfully lightly sweet & nutty milk that’s so yummy mixed with espresso or coffee. This time I made lattes with Nespresso’s Solelio & Giornio coffees which are light and medium in roast with red fruity & white floral notes respectively. These are absolutely perfect for lazy Sunday mornings. The hazelnut…

Berry Superfood Smoothie Bowl

Learn how to make a smoothie bowl with this delicious, antioxidant-packed recipe! Almond butter gives it protein and amazing PB & J flavor.

This scenario happens often: I get on a smoothie kick, and I make the same one again and again and again. Same time, same place, same smoothie. Tell me that this happens to you too? This berry-spinach smoothie bowl recipe is my new latest obsession. Why You’ll Love this Smoothie Bowl Recipe It tastes amazing. Instead of banana, I add a scoop of almond butter for creaminess (and a little protein). As a result, it has a hint of PB&J flavor – it’s SO delicious and also husband-approved. Which means that I’m pretty sure it would be kid-approved too. It’s easy to keep the…

Best Green Smoothie

The BEST green smoothie recipe! It's chock-full of healthy ingredients like fresh spinach, but you'd never guess it from the sweet, delicious taste.

This healthy green smoothie is my latest breakfast obsession. If you’ve been reading the blog for a while, you know that I go in and out of breakfast kicks. I’ll eat one type of food every morning for a few weeks before moving on to the next phase. I’ve cycled through muffins, eggs, overnight oats, hot oatmeal, porridge, and more, but I have to say, this green smoothie kick might just stick around. I love starting my day knowing that I’ve already had multiple servings of fresh fruits and vegetables, and this particular green smoothie is really delicious. It’s healthy,…

Lemon Ginger Gimlets

Lemon Ginger Gimlets are a pretty, healthier drink perfect for New Year's Eve, Christmas, or any winter cocktail hour. Easy to make!

It’s Friday, and it’s 5 o’clock somewhere – can we take a moment and cheers to that? These lemon ginger gimlets are the final recipe that I contributed to our Meals for Me & You feature on Anthropologie’s blog. I’m calling them “Gimlets with a Girlfriend” – so go grab your bff and mix these up tonight. Plus, lemon + ginger = “healthy drinking.” A lot has been going on this week so, if it’s alright with you, I’m going to speak in bullet points today. Here are links to some random bits that I found delicious and interesting: – This is crazy, but we’ve…
