Peanut Butter Goji Berry Granola Bars

Delicious & healthy homemade granola bars made with peanut butter, goji berries, pepitas, pistachios, and a little chocolate. Gluten-free and easy to make!

Happy New Year! Today I’m guest posting over at Better Homes and Gardens’ Dish Delish Blog. These granola bars were inspired by their recipe for Chocolate-Peanut Butter Granola Bars, which reminded me of the ones my mom used to pack into my school lunch everyday. I might not have that Barbie and the Rockers lunchbox anymore, but I thought it would be fun to recreate this favorite afternoon treat in a healthier way. My version is packed with goji berries, chia seeds, pistachios, pepitas, (and of course, chocolate)… These are so quick & easy to make. Click over to the BHG Dish…

Gluten-free Pumpkin Pancakes

To say that these are the best gluten-free pancakes I’ve ever had would be selling this stack short. I hesitate to ever make claims that something is “the best,” because taste is so subjective after all. But these (in my opinion) have to be right up there with the best pancakes I’ve ever eaten, gluten-free or not. I made these the other day for Jack and my mom (who is in town visiting right now). After we tasted, my mom said “what’s that special flour you used? I’ll have to get some of that.” “That flour” I used is Pamela’s…

Gluten-free Blueberry Banana Muffins

Bananas are one of the few foods I really don’t like. Bananas and cantaloupe, in case you were curious. Banana bread, however, is one of my favorite things ever. And because I’m impatient, I often make it in muffin form. Eighteen minutes is long enough to wait, don’t you think? These are gluten free but you wouldn’t know it. In fact, I didn’t even tell Jack until after he had already inhaled three. I used Pamela’s Gluten Free Baking & Pancake Mix and the texture came out just perfect. The flavor – sweet and banana-ey…everything you’d want in a muffin, gluten free or not. I added…

Whole Wheat Vegan Waffles

A squeeze of lemon gives these whole wheat vegan waffles a lovely buttermilk flavor and light texture. A great healthy weekend brunch!

Fall happened for me last night. I stepped off the plane at Midway Airport (in shorts) and immediately thought “they really have the AC blasting here.” Until I realized, oh wait, that’s just Chicago. As I write this, I’m sitting in the kitchen I grew up in (with a few sweaters on), thinking about some of my warmest fall memories… Saturday mornings with pancakes and waffles are definitely at the top the list. Crisp, cool air, hot waffles… and most likely the Muppet Babies on TV in the background. Make-Ahead Vegan Waffles These vegan waffles are great right off the waffle iron, but lately (especially…

Healthy Granola

This easy 7-ingredient granola recipe is a delicious healthy snack or quick breakfast. It not only tastes delicious, but it smells amazing while it cooks!

This is my go-to healthy granola recipe. Packed with oats and nuts and naturally sweetened with maple syrup, it’s a great way to get fiber and healthy fats into your first meal of the day. Even better, it clumps well! I add a tablespoon of almond butter to bind the components together, so you get plenty of delicious nutty clusters. I like to make it on Sunday and have it on hand for yogurt parfaits throughout the week! While we don’t have kids that are going back to school this week, I’m starting to think more and more about healthy make-ahead breakfast…

Tomato & Zucchini Frittata

I love to make this zucchini frittata when I have an abundance of summer vegetables on hand. Serve it for an easy, delicious brunch or dinner!

The frittata is one of my favorite things to throw together because, really, anything you need to use up can go into a frittata. Last week, I had a variety of tomatoes, zucchini, and some really lovely sweet potato greens on hand, so I made this simple zucchini frittata. Use this recipe as a guide to use up whatever you happen to have in your refrigerator – for example, spinach or kale would be easy substitutes for the sweet potato greens. This Zucchini Frittata is Healthy! A while back, I used to shy away from frittatas because I thought they required lots of butter…

Mango Matcha Smoothie

This mango matcha smoothie recipe is a healthy breakfast or snack. Mango makes the smoothie sweet & creamy and matcha makes it healthy & green!

I’m not sure if you all noticed, but Jack made his 3rd post a few weeks back. (Check out his Blueberry Smoothie, if you missed it). This guy, I tell you, is crazy about smoothies. If he’s the smoothie king around here, then I am the matcha mistress. But both together? Well that’s just a match(a) made in heaven. (I know, bad pun, I just couldn’t help myself…) If you look at this recipe, you’ll notice that I leave out a common smoothie ingredient: banana. That’s because fresh mango works as a nice thickener on its own, so there’s no…

Blueberry Rooibos Tea Smoothie

Learn how to make the BEST blueberry smoothie with this simple recipe! Easy, fresh & healthy, it's a yummy, antioxidant-loaded breakfast or snack.

Today I’d (and this is Jack again, by the way) like to bring you another one of my favorite recipes for a hot summer day – a great, fruity smoothie. You see, Jeanine likes smoothies, but I really, really love berry smoothies. And I don’t need them for a workout, or to wake up, or any regimen – we’ll be walking down the street randomly, and I’ll just decide that it’s smoothie time. I have no smoothie shame. Blueberry Smoothie Recipe Ingredients This yummy blend starts with two of my smoothie favorites: blueberries and raspberries. The blueberries make up the…

Spring Onion Asparagus Frittata

A frittata is the perfect brunch recipe! This spring onion & asparagus frittata is so fresh, healthy. It's easy to make and so delicious.

Easter weekend might be a whole week away, but I figure it’s never too soon to start gathering with friends for a spring brunch. We could call it Friendster—get it? Like “Friendsgiving” but for Easter instead… (and not like the late 90’s social media website). Ok, maybe not. I can hear you groaning through the computer screen. Whatever you decide to call your spring gatherings – make this easy asparagus frittata. First thing: blend your eggs in a blender. I’m sure many of you do this already. I, myself, have been lazily ignoring this tip for years thinking my whisking…

Rainbow Chard & Wheat Berries

Grains & greens. Avocado & eggs… I could probably stop blogging right here and be happy eating this meal every day. Or at least in theory. In reality, I need variety otherwise I have a way of wrecking foods for myself. (One year in college, I ate plain oatmeal 2x a day — breakfast and lunch — and now I can’t stand the sight). The beauty of the grains and greens meal is that it can be changed up a thousand different ways. (Although, I get it — oatmeal can be changed up too. By the time I learned that it was far too late).…

Chilaquiles with Avocado

Chilaquiles with Avocado - my take on fresh healthier chilaquiles. Made with corn tortillas, eggs and red chile salsa. A favorite for breakfast or brunch. Gluten free.

I’m thinking of trying to grow avocados this spring… I don’t really have a green thumb, but I eat so darn many of them, I figure it’s worth a try. (Also, I’m just now realizing that this is my 3rd avocado recipe in a row – oops!) If anyone has any experience growing them, please let me know! I’m guessing that I probably have to start soon… Today’s recipe is something I really love to make at home because it tends to be a little too greasy for me at restaurants. Chilaquiles are usually considered hangover food and it all…
