Mango Peanut Tempeh Tacos

Whenever I buy red cabbage (or any cabbage, for that matter), I have it around for weeks. I like the bit of crunch it adds to my tacos but I hate the space it takes up in my fridge while I try to think of uses for the rest of it. This recipe probably looks a little familiar – after I made last week’s rice bowl, I made these tacos out of nearly the same ingredients. (Cook once, eat twice, I say). I used up more of my red cabbage, diced mango, avocado and that tasty coconut peanut sauce. These are…

Spicy Mango & Avocado Rice Bowl

It’s been feeling summery around here, so I say – let’s bring on the colorful food! Lately, I’ve been slightly obsessed with these black rice veggie sushi rolls that are new-ish at (our) Whole Foods. One in particular includes mango, avocado and cucumber and I find myself craving it all the time. I’ve had it on my list to recreate it for you for awhile now, but the idea of rolling sushi has felt too labor intensive. For us, at-home sushi making is “sometimes” food. It’s reserved for those special nights when the sake is flowing and we have nothing but extra time……

Toast with Radishes & Dandelion Greens

I’ll never forget the first time I bit into a radish. I was in Sunday school and I was maybe seven or eight. I’m not sure if they ate radishes in Bible times, but for whatever reason that morning’s lesson involved passing around new raw foods to try. I don’t remember much else about that day except the shockingly bitter taste that I couldn’t get out of my mouth until my family picked up Dunkin’ Donuts on the way home. I spent years picking radishes out of salads until I slowly came to love the crunch and slightly bitter bite – especially when thinly sliced,…

Almond Milk Chai Latte

This grab-and-go almond milk latte is SO simple and is made up of ingredients from your spice drawer - cinnamon, star anise, and cardamom.

For years, I had a very routine “breakfast” that I would pick up on my way to work: a double tall soy latte at 110 degrees. (I know, I was one of those coffee-orderers). These days, I’ve swapped my beverage breakfast for a real one, my expensive coffee for tea, and my soy milk for almond milk. Although I now work from home, I still love to get a quick start in the morning. Which is why I’m so excited about this recipe – this latte is SO simple and is made up of ingredients from my spice drawer which makes me wonder how I ever…

Lemon Broccoli Pasta + Exciting News!

I’ll cut to the chase and just start with “exciting news” part – we’re writing a cookbook! I haven’t been overly secretive about it, but it’s official… 288 pages of never-been-blogged-before vegetable-ey goodness will be out next April! (I know, I know, a whole year away – I promise it’ll be worth the wait). It’s being published by Penguin US and Penguin Canada, the teams behind some of my favorite books including Oh She Glows and What Katie Ate. We’ve been hard at work for months now and I can’t wait to show you how it’s coming together! I’ll be sharing updates and previews…

Kale Salad w/ Avocado Tahini Sauce

This green-on-green salad was inspired by St. Patrick's Day, but its fresh flavor & creamy dressing have made it one of my year-round lunch favorites.

I have a very green, yet not very St. Patrick’s Day-themed recipe today. Maybe next year will be the year that I finally decide to revamp the shamrock shake (why don’t I think of these things earlier?). But for now, I’ve got green-on-green-on-green. Kale, brussels sprouts and avocado…. with some other veggies tossed in for crunch and a pop of color. The trick to raw kale salads is usually to massage the kale – this time I just chopped the leaves really small, mixed them with shaved brussels sprouts, and tossed it all with a creamy avocado tahini dressing to help wilt…

Matcha Green Tea Ice Cream

When we go to Japan, our favorite treat is the matcha green tea ice cream. Here's my vegan version, which uses coconut milk in place of dairy.

Jack here, bringing you one of the many joys from our Japan travels – matcha ice cream. We had no idea, before going, that green tea ice cream was even a thing. But the minute you walk down the street in any touristy area, you’re guaranteed to see giant fake green soft-serve cones outside of ice cream shops. Seeing something so American and familiar as a giant fake soft-serve ice cream cone, but *green*, was, well, it made me want to eat some. Fast forward through the trip, and Jeanine and I must have eaten 1 cone each every other day. So enough…

28 Seasonal Favorites + Carrot Top Pesto

Your ultimate resource for carrot, brussels sprout, mushroom, sweet potato, and kale recipes. AND a carrot top pesto!

Two things I’m obsessed with: vegetables (no surprise there), and Instagram. I love posting images of pretty vegetables, but I also look to my feed for fresh, colorful veggie inspiration. Which is why I’m excited to participate this week in #urwhatupost – a fruit and vegetable takeover movement by Bolthouse Farms. They’ve created this cool website that shows how many people are tagging healthy vs. unhealthy foods in real time. For example, as I type this, the scale is about 65% junk food, and 35% fresh produce, but today through March 6th, we’re trying to change that. Things like #icecream…

Vegan Spelt Chocolate Chip Cookies

Looking for the BEST vegan chocolate chip cookies? You've found them. Double this recipe to make a bigger batch, and enjoy!

Happy Saturday! I’m so excited to share this vegan chocolate chip cookie recipe today because I just realized something: for as much as I love to bake cookies, this blog is seriously lacking recipes to show for it. Then, I realized why – the camera can hardly snap a photo before Jack reaches his hand into the frame, and they all disappear. Waiting for me to arrange warm cookies nicely on a plate is not something this guy I’m with usually has the patience for. But today, we were able to get a few shots of these, and I couldn’t be happier, because…

Loaded Sweet Potato Avocado Toast

Loaded Chipotle Sweet Potatoes & Kale with Pickled Radishes are fun, healthy, and filling toppings for classic avocado toast! A perfect vegan snack or main.

I know – avocado toast is SO over, and even if it weren’t, you don’t need a recipe for it. This trend might be on it’s way out, but you’ll still find me (and pretty much everyone else on Instagram) happily smashing & snapping away. I usually keep mine simple – avocado, lemon, salt, pepper, and a sprinkle of hemp seeds. It’s a perfect combo that doesn’t need to be messed with, but since this was “dinner toast” for us one night last week, I thought I’d get a little fancier with the toppings. (Also, Jack is still claiming that he…
