Pop the champagne (vinaigrette)! This bright, citrusy salad dressing has become one of my favorites lately, and I think you need it in your back pocket too.
Let me tell you why I love it. Compared to its more assertive cousins (say, balsamic or white wine vinegar), champagne vinegar has a quieter, more delicate flavor. As a result, this champagne vinaigrette is ideal for drizzling over the tender lettuces, herbs, and other greens that are in season at this time of year. It gives them pep and zing, but it doesn’t overwhelm their natural sweet, earthy, and herbaceous flavors. So, if you find yourself tossing together a side salad in the next couple of weeks, remember: this champagne vinaigrette would be the perfect way to dress it up.
Champagne Vinaigrette Recipe Ingredients
Here’s what you’ll need to make this champagne vinaigrette:
- Champagne vinegar – This delicate vinegar is crisp and fruity. It adds tang to the dressing without being too sharp.
- Fresh orange juice – Don’t reach for store-bought orange juice when you make this dressing. Instead, squeeze an orange yourself! The fresh juice brings out the fruity notes in the vinegar and adds zesty flavor to the dressing.
- Honey or maple syrup – For balance.
- Dijon mustard – For a peppery, tangy kick.
- Extra-virgin olive oil – It gives the dressing body.
- And sea salt – To make all the flavors pop!

In a small bowl, whisk together the vinegar, orange juice, honey, mustard, and salt.
As you whisk, slowly pour in the olive oil to emulsify the dressing.
Alternatively, you can place all the dressing ingredients in a small lidded jar and shake to combine. That’s it!
Store the dressing in an airtight container in the fridge for up to 5 days.

Excellent as written & added a little more honey . Made a simple salad with sweet onion, avocado w/ butter lettuce & fresh dill. Adding filet & prawns for a dinner party.
