This baked brie recipe is about to become your favorite party appetizer. Rich, gooey, and decked out with flavorful toppings, it looks impressive and tastes delicious. This baked brie will absolutely wow guests.

But I’ll let you in on a secret—baked brie is quick and easy to make. It’s as simple as popping a wheel of cheese in the oven and baking until it’s melty and soft…which takes 10 minutes or less!

Effortless and elegant, this baked brie recipe is perfect for the holidays or any festive occasion. Put your personal spin on it by playing with the garnishes on top. I love a combination of honey, toasted pecans, and fresh thyme, but cherry or fig jam, walnuts, rosemary, and more would be great here too.

How to Make Baked Brie

The first few times I had baked brie, it was wrapped in puff pastry. But as I experimented with my recipe, I found that I actually preferred the cheese without it. It’s easier to prep, and you have more room for toppings like honey and pecans (which really make this recipe, if you ask me).

Here’s my preferred method for how to bake brie:

  • Start with an 8-ounce wheel of brie that’s cold from the fridge. This is my #1 tip for making this recipe! If the cheese is at room temp before you put it in the oven, it will melt as it bakes (I learned the hard way). We want it to be melty but not melted, so keep the cheese in the refrigerator while you preheat the oven to 350°F.
  • Line a baking sheet with parchment paper. The parchment paper is not optional here. It will allow you to transfer the delicate baked brie from the baking sheet to a serving platter. If you prefer, you can skip the parchment and use a small baking dish that can double as a serving vessel. But if you choose this option, keep in mind that the dish will still be hot when you serve the brie. Make sure to let guests know so that they don’t accidentally touch the dish.
  • Bake the cold cheese on the parchment-lined baking sheet for 8 to 10 minutes. It’s ready when it’s soft in the middle.
  • Use the parchment paper to carefully transfer the brie to a serving platter. Layer honey, pecans, and thyme (or your desired garnishes) on top of the brie, and enjoy!

Recipe Tip

Baked brie is best served warm, straight from the oven. It stays melty and gooey for 10 to 15 minutes after baking, but beyond that, it starts to cool and firm up.

What to Serve with Baked Brie

A wheel of baked brie isn’t complete without toppings! I love mine with honey, toasted pecans, and fresh thyme, but other garnishes would be great here too. If you’d like to change things up, I recommend choosing one item from each of these categories:

  • A sweet spread: Use cherry or fig jam instead of the honey, or top the cheese with cranberry sauce. You could even drizzle the top rind with maple syrup!
  • A nut: Toasted walnuts or pistachios are a nice alternative to the pecans. Use toasted pepitas for a nut-free option, or feel free to skip.
  • An herb: Rosemary is lovely in place of the thyme.

You also can’t go wrong with a sprinkle of flaky sea salt.

Serve with crostini, crackers, or baguette for scooping up the melty cheese. I also love to pair this recipe with apple slices and grapes. They offer a delicious fresh contrast to the rich brie.

Ingredients

  • 1 (8-ounce) round brie cheese, chilled*
  • Honey, for drizzling
  • Chopped toasted pecans, for sprinkling
  • Flaky sea salt, for sprinkling, optional

For serving

  • Fresh rosemary or thyme sprigs, for garnish
  • Sliced baguette, crostini, or crackers
  • Apple slices
  • Grapes

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Place the chilled brie on the baking sheet and bake for 8 to 10 minutes, or until soft in the middle.
  • Remove from the oven and carefully transfer to a serving dish (the brie will be fragile after baking).
  • Drizzle generously with honey and sprinkle with chopped pecans and flaky sea salt, if using. Garnish with rosemary or thyme and serve with baguette, apple slices, and grapes.

Notes

*Make sure that the brie is cold from the fridge when you put it in the oven, not at room temp. If it starts out too warm, it will melt as it bakes.
