A fancy fall grilled cheese that's sweet and savory. Delicious for a quick weeknight dinner.
Of course you don’t need a recipe for grilled cheese, but I just HAVE to share this simple combo because it’s so so delicious. This is the sort of thing that I love to make when I don’t feel like spending time in the kitchen but I also don’t feel like leaving the house.
Sweet, soft apples, savory sage, red onion, and a good slather of grainy mustard – all between melty cheese (or vegan cheese) and bread. I think this might be my favorite sandwich assembly to date, I just love the sweet and salty mix. Make these with a bowl of soup and you have perfect week-after-Thanksgiving couch food.

Apple Sage Grilled Cheese
- 8 slices of bread
- 1 tablespoon grainy mustard (I likeSir Kensington’s Spicy Brown)
- 2 to 3 cups grated white cheddar, Gruyère or Daiya cheese
- ¼ red onion, thinly sliced
- 1 apple, thinly sliced
- 16 sage leaves
- Extra-virgin olive oil, for grilling
- Assemble 4 slices of bread with a slather of mustard. Add some of the cheese, the red onions, apple slices and sage leaves. Top with the remaining cheese.
- Preheat a grill pan over medium heat. Brush the outsides of the sandwich with olive oil and grill on each side until the cheese is melted.

YUM! I was looking for a simple recipe to use up some leftover fresh sage and this was perfect.

Do you just put the raw sage inside? I remember Gordon Ramsey or someone saying to NEVER eat raw sage. I personally don’t mind it!
