It’s peach season over here! (I know, it comes early here in Texas). But when it’s peach season I have just one objective: Eat as many peaches as possible until it’s not peach season anymore.
On Saturday, I came home from the farmers market with these beautiful heirloom cherry tomatoes, sweet peaches, and my favorite nine grain (Easy Tiger) bread. I truly believe summer food should be simple, so I made this easy bruschetta for dinner along with a huge salad. It was perfect for a hot summer evening along with ice cold white wine.
I used creamy avocado this time instead of any sort of cheese, but it would also be nice with a little burrata or even a slather of goat cheese.
tomato, peach & avocado bruschetta
- 1 cup sliced cherry tomatoes
- drizzle of olive oil
- 1 garlic clove, minced
- drizzle of white balsamic vinegar
- 2-4 peaches, cut into small pieces
- 1 avocado, diced
- chopped basil and/or mint
- generous amounts of salt & pepper
- about 4 - 6 slices of bread
- Toss tomatoes in a small bowl with olive oil, white balsamic, minced garlic, salt and pepper.
- To that add the peaches, avocado, basil and mint and toss to coat. Taste and adjust seasonings, adding more salt and pepper as needed.
- Toast slices of bread and pile everything on top. Drizzle with more olive oil and serve immediately.

After discovering and making this recipe for the first time back on September 15 2017, I scribbled down my husband’s and my reaction. “Borderline excellent!” Was just last night reorganizing my recipes based on the seasons of the year. When I came across this one with it’s scribbled remark, thought I’d give it another go (since it is now peach season in Jersey after all – and now my mom is living with us too…). When my husband saw the bowl, he thought the whole thing was for him. Disappointed that he found he would have to share with us. Mom’s take: “This is FABULOUS!” I’m just a little frustrated because among the three of us, it’s all gone. It only lasted a few minutes. Next time I’ll have to double the batch! I love this recipe. I’ve used it as a base for sooo many other bruschetta combos depending on what’s in season. Another thing I do is sometimes I mash up the avocado and use it as a spread, then layer the other fruit on top. This way everything sticks to the avocado and you don’t have any fallen soldiers.

Tomatoes, peaches and avocados … I love the growing season for all the fresh fruits and vegetables available to experiment with. The picture for this bruschetta literally jumped off the screen at me and as I’ve never combined peaches and avocados before (2 of my favorites), I’m off to try this.
This is why I love summer food..you can just combine a bunch of fresh summer ingredients and it turns out great!
